Level 4 Award in Managing Food Safety in Catering
Leicester City Council is a registered centre for the Chartered Institute of Environmental Health’s Advanced Certificate in Food Hygiene.
The course is intended for managers and proprietors of food businesses, and for those people who wish to become trainers in food hygiene. It is run over 6 days with a 2 ½ hour exam on a separate day. An integral part of the course is completion of two written assignments. As part of the course two days are scheduled in to work on the assignments.The contents of the course are:
General introduction to food hygiene
Bacteriology
Food poisoning and food borne disease
Non-bacterial food poisoning
Contamination of food and its prevention
Food storage and temperature control
Food spoilage and food preservation
Design and construction of food premises and equipment
Cleaning and disinfection
Pest control
Personal hygiene
Education and training of food handlers
Legislation
Management control techniques and hazard analysis
The course fee is £560 and is fully inclusive of:
Tuition and examination fees included
Personalised presentation folder for notes and information sheets
Your own copy of “Food Hygiene Management” by Richard Sprenger or similar
Refreshments and lunches throughout the course
