1. All articles, fittings and equipment with which food comes into contact are to:

• be effectively cleaned and disinfected on a regular basis to avoid food contamination;

• be constructed of materials and kept in good order and condition to minimise contamination risks;

• be installed to allow cleaning of the equipment and the surrounding area.
